    2. Carl, according to Wikipedia: Boxty (Irish: bacstaĆ­) is a traditional Irish potato pancake. The dish is mostly associated with the north midlands, north Connacht and southern Ulster, in particular the counties of Mayo, Sligo, Donegal, Fermanagh, Longford, Leitrim and Cavan.
