At a guess I would say the reason I cannot find George on 1851 Census, as he was serving in Ireland, this would be where he met Honara (Norah) and married her, as two of his sons were born in Ireland. I found George Roebuck on the 1861 Census, he is 42 a Coal Miner, his wife Norah is 36 born Innes, Ireland, children John 15 is a horse drive in coal mine born Trawlee, Kerry Ireland, William 14 born Spike Cork Ireland, George 12 born Plymouth, Derbyshire, Fanny 11 born Derbyshire, Charles 9 born Brecknock a Horse Driver at Coal Mine, Thomas 2 born Rawmarsh, Yorkshire and Joseph 9 mnths also born Rawmarsh. Living at 43 Chapel Street in Rawmarsh, Yorkshire. Honora Roebuck died in Sept 1866 at the age of 42 death registered in Rotherham The 1871 Census. George is living at 172 New Street, Rawmarsh with his son, William 24 born in Cork, Ireland he is a Driller. William's wife Martha 22 born Rawmarsh, their daughter Charlotte 4, Mary Ann 3, Isaac 2, Arthur John 8 mnths, George is 52 and is a Miner, born Condor Park, Derbyshire, also George's sons Charles 19 a Miner born in Brecon, Wales, Thomas 16 a Miner born Rawmarsh. George's wife Hanora must be deceased. I believe I have found George's Widowed brother Thomas on the Census. He is 62 a Blacksmith born Aston Park in Derbyshire, he is living with his unemployed son William 34, Thomas 32 a Roller Ironworker and Matthew 29 also a Roller Ironworker all born Parkgate Yorkshire, all living in Rawmarsh.
