Hi Steve, The 1831 OS 1" map, and every Census Report from 1801 to 1881 inclusive, prints it as "Coston" - and with a 'proper' "s"; not the long-form version that resembles an "f" - so I suggest that this interpretation is likely to be wrong... >From the 1891 Census Report onwards it's been "Cofton". I've not traced any formal document that established the change of spelling, and have to accept that it was "some date between 1881 and 1891".
