Hi Steve, I've been away for the week and have only just seen your Monday's posting... The change from Cofton to Coston throughout most C19 could well have been the result of a continually-repeated mistranscription, but certainly at the time of the 1851 Census (which was the origination of this exchange) it was clearly in general use as Coston, for that was - with a potential mistranscription by the enquirer, for Ancestry index it as Coston, not Caston - how it was recorded by the enumerator. [HO107/2047/317/19 (and 17)]. It is *possible* that the change may have been made following the early-1880s Public Consultations over the Parish Boundaries prior to the issue of the OS 1st Edition 6" and 25" Series - but that it took a little time for Official Recognition to be granted. Although at this stage this can be little more than a guess.
