Stuart, I have found a George GUEST living with his wife Sarah in the Park District of Sheffield in 1861. This George has the occupation of Carter, is aged 25 (and Sarah is aged 23), George was born in Durham though so this (and the fact that Sarah is too old) will probably not be them.
