It would be a very likely occupation for a young man in that area to take on . It is now mainly a tourist line, but has been very important in 1800's Yes local accents could sound very shortened and an enumerator in Hunmanby 1851 might not hear or spell it correctly. Also helpful for you is that Gawan /Gawin is not a very common name. Do you know when he died? Is he in any other census.?
