If you go to the 1881 census and search for John FORDHAM in Hitchin (born 1836 Melbourne Cambs, he is living with family at Park Street Hitchin, enumerated as "The Falcon" Although he is a Smith by trade its possible his home was once a pub named the Falcon. Again try http://maps.google.co.uk/ and Park Street Hitchin, this gives a Park Street in Hitchin near to Stevenage Road which may be the location of your Falcon? There is a Lord Lister Hotel at 1 Park Street but the history of it does not mention the Falcon. Perhaps there are others.
