    2. Pat, I think the closest thing to castor sugar in the US is confectioners sugar and I think you should be able to find rennet tablets at some of the grocery or health food stores here.     3. Rennet is used to make cheese, too. Not you gross you guys out too much, but it comes from the stomach of a calf - doubtless to help the little fellow digest all that cow's milk. You should be able to buy it. There is a fake kind called vegetable rennet, too, for people of the vegetarian persuasion. Actually, though, the best substitute in the US for castor sugar is that superfine sugar you see in the supermarket. I think they sometimes call it fruit sugar, too. The problem with confectioners sugar is that it has a bit of corn starch in it, which thickens or clouds recipes in undesirable ways. Oh Lordy ... we're way off topic and we're going to have our wrists slapped now.
