Aileen: I'm not quite clear what you are looking for. If you have the marriage entry in 1845 that will give the names of the fathers, which takes you further back. Hello Pat, I'm pretty sure it was called saltpetre. My Mom used to use it as well. It was sold either in Boots the Chemist or Timothy, Whites & Taylor in Dudley. It was discontinued because of health reasons. I suppose it was used as it would have been cheaper than using eggs. Hi again to everyone. Many thanks for all who have replied about my query about batter colouring. I am not surprised that it was withdrawn from sale for containing saltpetre. Wow! Those were meals which could have gone with a 'bang'. I felt sure that my mom had said there was some health reason it wasn't available any more. That's my lesson for today, and once again, many thanks to everyone. Best wishes Pat Allen in Leicestershire.

Saltpetre is one of the constituents of gunpowder, so I reckon it would affect your health <bg> Yorkie

If you use eggs to make the batter, then you don't need colour - that sounds like a "measure" left over from the times of rationing? Polly ----- Original Message ----- From: "David Allen" <allen1610@hotmail.co.uk> To: <eng-black-country@rootsweb.com> Sent: Monday, December 19, 2011 7:34 PM Subject: Re: [Black Country] Batter mix Hi Pat Not sure but we used to use "egg colour" in the bakery trade, it was an orangey powder and watered down gave a rich yellow colour like egg yolks. I believe that also has faded from use. I tend to use yellow colour (from most supermarkets). I would imagine the result should be similar. Kind regards Dave Regards David Allen Tech. I.O.S.H; Cert.
