    3. Hi Ian, My copy of "The Dairy Book of Home Cookery" quotes the following. Dried Yeast This can be used instead of fresh. Allow 2 level teaspoons dried yeast for every ½ oz. fresh yeast recommended in a recipe. To reconstitute, dissolve a teaspoon of sugar in a little of the measured liquid---which should be warm.
