Hi Older wills (pre 1858?) are held in a variety of places, The National Archives have a searchable collection that can be purchased online, local record offices hold collections mainly from the local diocese/area I believe. Oxfordshires has an online search facility for some of its records. There are also printed lists held at local study centres.
