Sweet Potato Biscuits Wednesday, September 30, 2009 Ingredients Needed: 1 baked sweet potato (about 2/3 to 1 cup) mashed 2 TBSP cooking oil 3 or 4 TBSP milk 1 cup self-rising flour 2 TBSP sugar 1 tsp nutmeg Directions: Blend potato, oil and 3 TBSP milk. Stir together flour, sugar and nutmeg. Stir in wet mixture just to mix. Use the extra TBSP milk if needed to make a dough. Turn out onto a floured board and knead several turns. Pat out to about 1/2” thick and cut into biscuits. Bake in a preheated 400 deg oven about 12 to 15 minutes or until brown. These are good hot or cold and great with a slice of ham in them.
