Charles, this gal had a pint of hamburger?canned. and it was a first for me too. She said she did it for emergency situations. she has menu's made out using the canned hamburger. to either make chili or spagetti etc.. I can see the dangers with the snow and ice.. one thing I learned is to make sure the pantry and refrig is full in case you get snowed in.? I always try to keep a good supply of canned stuff and thank goodness right before we had the heavy snow storm I got us milk to last.. Charles, I know you do canning and I went to a class that was on food preparedness and saw for the first time a mason jar with canned hamburger, chicken.? SHIRLEY H, MY DAUGHTER IN LAW CATCHES MEATS ON SALE AT THE STORE AND BUYS IT UP AND CANS IT. SHE DOESN'T HAVE A FREEZER AND ONE ISN'T IN THE BUDGET RIGHT NOW SO SHE JUST CANS IT. SOME ONE GAVE THEM A DEER SOMETIME BACK AND SHE TOOK A DAY OF FOR WORK AND CANNED EVERY BIT OF IT. WHEN I WAS GROWING UP WE DIDN'T HAVE A FREEZER, EITHER BEFORE THEY WERE MADE OR WE COULDN'T AFFORD ONE REMEMBER I GREW UP IN THE ERA WHERE YOU HAD A LARGE CHUNK OF ICE HOME DELIVERED TO GO IN YOUR REFRIG.(ICE BOX). mILK WAS KEPT IN THE SPRING. LOL I'M NOT ANCINT BUT GETTING THERE. LOL ANYWAY WE LIVED ON A FARM SO EVERYTHING WAS CANNED. WE KILLED 2 OR 3 HOGS AT A TIME. WE MADE SAUSAGE OUT OF A LOT OF THE MEAT WHICH WAS CANNED. HAMS AND SHOULDER MEAT WAS HUNG IN THE SMOKEHOUSE. THE TENDERLION WAS ALSO CANNED. SOMETIMES PORKCHOPS WERE MADE AND THAT TOO WAS CANNED. CHICKENS WERE KILLED 40 OR 50 AT A TIME AND THEY WERE CANNED. MY MOM COULD GO TO THE SMOKEHOUSE OR BASEMENT AND FIX A MEAL IN HALF AN HOUR FIT FOR A KING. YUM YUM DAUGHTER IN LAW LOVES TO COOK SO WHEN SHE GETS IN THE MOOD SHE WILL STIR UP ENOUGH CAKE BATTER(FROM SCARTH) TO MAKE SEVERAL CAKES. SHE MAKES THESE IN LARGE MOUTH MASON CANS AND STORES THEM IN HER BASEMENT. I HAVE TRIED THIS BUT DIDN'T SPRAY MY CAN SO I HAD A MESS!!! ABOUT ANYTHING CAN BE CANNED. I NEVER CANNED A LOT OF MEAT BECAUSE I WAS TOO AFRAID OF SPOILAGE BUT WE DID IT IN THE OLD DAYS WITH OUT A PRESSURE COOKER AND IT KEPT WELL. WE RAISED 70 BUSHELS OF POTOTOES ONE YEAR AND DUG A LARGE HOLE IN THE GARDEN LINED IT WITH STRAW AND BURIED THE POTOTOES. ON A WARM DAY DAD WOULD DIG A SMALL HOLE AND TAKE OUT A BUSHEL OR TWO AS WE NEEDED THEM. THEY DON'T SPROUT AND SWIVIL UP LIKE THEY DO WHEN YOU STORE THEM. THOSE WERE HARD WORK DAYS BUT GOOD OLD DAYS.
