One explanation I can think of as to the name Katherine being put on the death certificate is that whoever gave the information just thought her name was Katherine. This happens when many years have passed, and no one is really sure about names. The only other thing would be if Louisa died and Thomas married again to someone named Katherine and whoever gave the death certificate info just thought Katherine was the mother's name. I think it was just an error. There is too much info to prove that Amanda's mother was Louisa - the 1860, 1870, and 1880 census records all have her name as Louisa, although in 1860 it is misspelled "Lucy".
