v My grandmother was a Cop. Her brothers in America spelled it Chopp, but I'm not sure if that's what they got at immigration or if they chose the spelling. The pronounciation she used was always 'chop', as in to chop wood. When we visited her hometown in Croatia (Lokve, Gorski Kotar region) there were many Cop in the town cemetary, and the local family we visited with also pronounced it the same way. I don't know the history any farther back than two generations though.
