One actually "pulls" a proper pint of Guinness which is a process that takes about 2-3 minutes. The bartender fills the glass slowly to about 75% of capacity and then sets it on the bar. Stupid tourists sometimes reach for the glass at this point and become subject to ridicule from the locals. One must wait patiently for the Guinness to "work" and develop the beautiful, rich creamy head that stays intact during the entire drinking experience. After a couple minutes the watchful eye of the bartender determines it is time to finish the pint and fill the glass to its entirety.
