Do you have any approximate dates Chris?? Do you know what country they came from or on what ship?? "East Canada" is rather vague and where it was depends somewhat on the dates, but does suggest somewhere closer to the Quebec border (i.e. Upper Canada). Of the the two surnames, Job might be the easiest to research as there are a lot of Williams. Under the surname "Job" only 361 shown in Canada's Ancestral Search, but over 8,000 for surname Williams! My cousin who is also tracing the Sibley line that landed in Halifax aboard the Beauforte in 1749, just sent me an email with all sorts of sites for the Parker name. Hi Myra, Well, Mom always used a fresh head of cabbage. She then shaved the head so that we had shredded cabbage that wasn't to thick. She aways used Olive oil in a cast iron skillet, she added a chopped spanish onion and stalk of celery as the cabbage got "limp", then some kind of seed, that was bitter to me, and finished cooking the cabbage. Hi Paulette: Perhaps you could redirect the list back to genealogy by posting something you are searching for?? Food our ancestors ate is a part of genealogy in my mind and am sure many have favorite family recipes handed down in their family trees. Survival in N. America depended on their ability to shoot and grow sustenance for the family. Saurerkraut was one way of preserving cabbage for over the winter and supposedly it has vitamin C in it. We look forward to hearing what your genealogy quest is. Sounds yummy, but could we get back to genealogy now?
Saurkraut is essentially sour, fermented cabbage. My mom made it the same way my grandfather did and that was to thinly slice whole cabbages on a device designed just for that purpose. She made it in a huge crock - 75 gallons filled with the shredded cabbage and layered with rock salt. She had a wooden tool that looked like a big potatoe masher to pound the shredded cabbage to bring out juices that mixed with the salt to create brine. It was important to weight down the top layer of cabbage as it fermented in the crock so that air didn't get to the mixture. I'm guessing it would spoil if that happened. It's been nearly 60 years since I remember my mother and the saurkraut and don't recall how long before the mixture was ready but I remember it was greatly reduced in volumn by the time it was. She left the mixture stored in the crock in the basement until it was all gone. I like it to this day rinced and drained and sauted in butter in a heavy fry pan accompanied with browned country sausages.

Hi Freda: Funny you should mention Scotch only coming in a bottle. The term "Scotch" to identify Scotsmen in N. America was widely used in both the U.S. & Canada. It is seen in many early books, census data, etc. It does seem to annoy anyone who still lives in Scotland to be called Scotch which is a malt whiskey. Again, education, accents and poor spelling must be kept in mind when reading old records or writings. Of course, being "Scotch" often meant being a penny pincher too. Wonder how often it was mispelled in Parishes in the UK? Hi Betty: Hope you had a great Thanksgiving. Lucky me got to celebrate again while in Minnesota for a few days so had a full turkey dinner again! The most common winter veggies on the prairies during my childhood were carrots, parsnips, beets, turnips and potatoes. These were stored in sand in our basement and it was often my chore to retrieve them for the kitchen - a dreaded chore. Towards spring some of the veggies would start to get soft and mushy so digging in the sand might jab your fingers into some yucky stuff. We also had corn, green & yellow beans plus peas - all canned in glass jars. Only Mom was allowed to open and smell the jars. Food poisoning (deadly ptomaine) was a hazard with home canning and even the smallest hint of an off smell, meant throwning it out. In the fall, pumpkin and cabbage were quite plentiful so we had lots of cold slaw, boiled cabbage and of course pumpkin pies and loaves. In Australia, apparently pumpkin is eaten as a savory veggie dish and seldom used in desserts. Now one can get a wide variety of veggies and fruit year round such as yams(sweet tatters), jimica, star fruit and some really weird looking items. Our first spring veggie was a weed called lambs quarter. The Oxford dictionary has many faces depending on what English speaking country you live in and the year your dictionary was published as they continue to keep up with the changes in the language and word usage. I have a different view of the word and its usage other than the current definition in the Oxford dictionary on line. When I lived in Scotland in the early 1960's the term "scotch" was used to refer to inanimate objects like food and drink like a scotch egg or a location Scotch Crossing and when used on people it was considered to be derogatory and therefore identified as a "pejorative adjective" (I learned this terminology in Scotland from my school master landlord and have never forgotten it). So for me to use the word on a person would be unthinkable and impolite. In the Navy and later in the Merchant Marine I certainly heard enough use of the term in a derogatory manner to cure me of ever using it to refer to myself or others. Hello, I've been posting queries about my BHC great-grandfather's last days in Sandwich, NH, this year. (And, his son's life there.) And, a little investigating showed that there was a "Woodstock Lumber Company" in that town, and much "housing" for the employees. A researcher responded with a page from the "history of Sandwich." With her permission I'm posting it here - because it mentions people who were "French Canadians" who came down to work there. See below. Betty (near Lowell, MA, USA) (Reminder: BHC = British Home Children) (aka "Child Migrants" from Great Britain) FYI: According to the book Sandwich, New Hampshire, 1763 - 1900 by The Sandwich Historical Society, pg160 - 161 The Beebe River Logging Railroad ... Tainter's Publishers Paper Company finally agreed to sell his vast holdings in the Presidential Range as well as in the Sandwich Range to the White Mountain National Forest, thereby rendering "a notable service," according to the bronze plate on top of Mt. Whiteface. But his holdings northwest of Sandwich were sold in 1916 to the Woodstock Lumber Company and the Parker Young Company, and soon thereafter the tracks were laid for the Beebe River Logging Railroad. With influential citizens such as Henry Dorr, Alonzo McCrillis, and Charles Hoyt either working for or supporting the Publishers Paper Company, there was little opposition to this operation. Indeed, the Sandwich Historical Society's first and second excursions in 1920 and 1921 were trips on the company's flatcars up to near Camp 10 in Waterville, with the picnickers "wildly cheering" the company head at the end of the first excursion. Then "Mr. Frye, superintendent, gave a brief outline of the lumber company's work and everyone came back feeling better acquainted with the wonderful work the Beebe River Company was doing there." The logging railroad was in full operation by 1920 with twelve camps and a huge imported labor force of 408 men consisting mostly of new immigrants, including 95 Russians and 65 French Canadians who worked as choppers, reamsters, loaders, landing rollers, sled tenders, saw filers, blacksmiths, carpenters, and cooks. The elegantly dressed picnickers got a glimpse of one of these lumber camps, "set in swampy marshes, deep in the mud, surrounded by pigs." Even though this group of lumbermen almost doubled the Sandwich adult population between 1918 and 1923, Sandwich's economy did not benefit from this lumber operation. True, local citizen's could earn two dollars a day to help fight the company's frequent forest fires, but no Sandwich native was on Woodstock's regular payroll. Horses, food, and other supplies were brought in from outside. What spending money the lumbermen had was used at the company store or in Campton, not in Sandwich. The trains ran five times a day seven days a week and needed a dispatcher's telephone line from the Beebe River mill to each of the camps. But on July 12, 1923, the whole operation came to a virtual halt. What was to become Sandwich's most destructive forest fire broke out on one of the Flat Mountain's southern slopes, burning uncontrolled for four days and consuming 3,500 acres. It was so intense, the smoke could be seen from twenty-five townships. The fire was still burning in the ground two months later. The men at Camp 12, unable to flee by railroad, had to run south toward Sandwich. It must have been a strange sight to the villagers to see these Sandwich residents on their streets, the only time they would ever be seen in the Center. The August 1923 letter from State Forester John H. Foster to the manager of the Parker Young Company contains the following comments on the fire: This fire was a catastrophe, viewed from any angle...you were operating...during dry weather and heat and yet you do not appear to have taken seriously the risk. You cut too close to the right of way, you ( allowed) the telephone lines...to be broken down, you left piles of slash beside the tracks, sidings, landings, and camps, and you ran your trains through the heat of the day instead of at night with sets of camp buildings unguarded and no effort to regulate smoking. We have reached the limit on these forest fire expenses in the Beebe River valley and feel strongly inclined to turn the whole matter of adjustment...over to the Attorney General. Although other publications covered the fire in detail, the Sandwich Reporter scarcely mentioned it. Perhaps the newspaper thought it better not to alarm summer visitors and potential property buyers during the height of vacation season when business was booming.
I have read the term Scotch (referring to nationality) in many books--written by Scots and referring to themselves. ( ie: Scotch kings) My gg mother came from Scotland and the family always referred to their nationality as Scotch. I refer you to the Oxford English dictionary. (The new authority on the English language.) There is a whole page of explanation for all the things Scottish which are also referred to as Scotch. The terms are interchangeable. I did see Garth Hamilton's explanation - he was quite informative.. I had seen a program about the movements to Ireland and then from there to the US. Hi Faye - no offense, of course not. Perhaps we are too picky about the term 'scotch' but I do notice that it tends to be used in the U.S. Did you read Garth Hamilton's explanation - it is very helpful and he passed on another little tidbit relating to the differences that I had forgotten about. Scotch though is very definitely a very fine drink.
