    3. Another thanks to George of the Irish Heritage Newsletter for passing this one on.... The Minstrel Boy The words are by Thomas Moore (1779-1852). (The last verse is a later addition.) The tune is an Ancient Irish Air The Moreen. It is believed by many that Moore composed the song as a memorial to several of his friends he had met while a student at Trinity College and who had participated in the 1798 rebellion of the United Irishmen. One died in prison, another was wounded and another later hung. He refused to testify against them. The song originally consisted of two verses. Due to its popularity, the song was a favorite of the many Irishmen who fought during the U.S. Civil War, primarily on the Union side. It was at this time that a third verse was added by unknown authors: The Minstrel Boy to the war is gone In the ranks of death you will find him; His father's sword he hath girded on, And his wild harp slung behind him; "Land of Song!" said the warrior bard, "Tho' all the world betrays thee, One sword, at least, thy rights shall guard, One faithful harp shall praise thee!" The Minstrel fell! But the foeman's chain Could not bring that proud soul under; The harp he lov'd ne'er spoke again, For he tore its chords asunder; And said "No chains shall sully thee, Thou soul of love and brav'ry! Thy songs were made for the pure and free, They shall never sound in slavery!" Verse added later: The Minstrel Boy will return we pray When we hear the news, we all will cheer it, The minstrel boy will return one day, Torn perhaps in body, not in spirit.     3. Thanks to George of the Irish Heritage Newsletter... Irish Apple Cake 5 medium apples (Macintosh preferred) 1 egg 3/4 cup sugar 1/2 cup butter 3/4 cup milk 1 1/2 cups flour 1 tsp baking powder 1/4 tsp salt Peel apples and cut up as for pie. Combine egg, sugar, butter to a creamy texture. Add milk and mix well. Add dry ingredients and mix until smooth. Pour half the batter into a well greased and floured cake tin. Add cut up apples and cover with remaining batter. Bake at 350 degrees for 30-40 minutes.... until top just begins to brown. Let cool in pan for 10-15 minutes. Turn upside down on serving plate.     3. SUBJECT: Martin DOYLE -abt 1802 - 1898 IRELAND>CANADA>Chesterfield, Essex County, New York. I am seeking Canadian and Irish information on Martin DOYLE from birth abt 1802 in Ireland and his stay in Canada up to approximately 1840. And any information on his first wife Nancy McCORMICK, born abt 1821 in Ireland, Died Bet 1850-1855 in Northern New York State and on his second wife Catherine McCrea born 1815 in Ireland, died 3 Jan 1906, Westport, Essex County, New York. Martin DOYLE's death certificate indicates his Father was Michael DOYLE born Ireland and his Mother was "Maggie" DOYLE. The US Federal Census of 1850 indicates Martin DOYLE and Nancy McCORMICK had at least three children, James b.abt 1842 in Canada and Timothy b.abt 1840-1844 also born in Canada. Timothy indicates on a naturalization document that he was abt 5 years of age when he came to the USA. Martin and Nancy also had another son, Thomas born 1849 in US who died very young. The US Federal Census also indicates that Martin DOYLE and Catherine McCREA (Martins second wife) had a son named John b.1 Apr 1845 also in Canada and died 8 Mar 1937 in Clinton County New York. I have searched numerous sources in Ireland, Canada, census reports of early Irish Immigrants to Canada, ships lists and steam ship lists on the St Lawrence River for over the past 2-3 years without finding any valid ties to Martin DOYLE and his family while they were in Canada evidently at least 5 years or more. He must have had friends or other relatives in Canada during that time. I am seeking anyone who may have some thread of information regarding his stay in Canada or his trip to Canada or where he and his Father Michael or Mother Maggie lived in Ireland. Thank you all in advance for your kind attention and am looking forward to any help or information you may furnish me with on this subject! Am sending this to a number of places in Canada because I have no clue as to where Martin DOYLE and his family were while in Canada. The Topographical Dictionary of Ireland, written by Samuel Lewis in 1837 is now on line at: http://www.libraryireland.com/topog/index.php I really recommend this for reading, especially if you know the area where your ancestors orignated from in Ireland. Lewis describes the civil parishes and larger towns in wonderful easy to understand language.     3. As you may have noticed, I have not been as involved with our list recently. Well, it has been an interesting 4 or 5 months for me. I took a trip to Denver in April, had house guests and family obligations in May, had major surgery in June, then went on vacation with my 16 year old grand daughter from July 16 to yesterday. We went to NYC, Ireland and upstate NY and had a great time. Needless to say, my mailing lists didn't get the attention they deserved during this period and hopefully no one had problems posting, subscribing and/or unsubscribing from the list. But, I am back and if you need any help, write me off list and do what I can to help you. I hope you all have had a great summer. After the 95 humid weather in NY, it was nice to land here last night to 75 degrees. Of course, it will get hot during the day today. I am researching the Warren Family who came from Geashill/Gurteen,lOffaly (Kings County) Ireland in the 1800's. I am presently looking for anyone who is a relative to George Warren who was in Guelph around 1856 or so. My husbands Grandfather & Uncle came to Canada 1901(?) & stayed in Ontario before going West & settling in Saskatchewan. We think they may have stayed with George. If anyone can help it would be greatly appreciated. It seems I am having better luck locating relatives in Ireland moreso then in Canada. Bangers and Mash Ingredients 8 large baking potatoes, peeled and quartered 2 teaspoons butter, divided 1/2 cup milk, or as needed salt and pepper to taste 1 1/2 pounds beef sausage 1/2 cup diced onion 1 (.75 ounce) package dry brown gravy mix 1 cup water, or as needed Directions 1 Preheat the oven to 350 degrees F (175 degrees C). Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 20 minutes. Drain, and mash with 1 teaspoon of butter, and enough milk to reach your desired creaminess. Continue mashing, or beat with an electric mixer, until smooth. Season with salt and pepper. 2 In a large skillet over medium heat, cook the sausage until heated through. Remove from pan, and set aside. Add remaining teaspoon of butter to the skillet, and fry the onions over medium heat until tender. Mix gravy mix and water as directed on the package, and add to the skillet with the onions. Simmer, stirring constantly, to form a thick gravy. 3 Pour half of the gravy into a square casserole dish so that is coats the bottom. Place sausages in a layer over the gravy (you can butterfly the sausages if you wish). Pour remaining gravy over them, then top with mashed potatoes. 4 Bake uncovered for 20 minutes in the preheated oven, or until potatoes are evenly brown. -- Pat Connors, currently visiting Troy, New York http://www.connorsgenealogy.com

Strawberry and Baileys Fool 1 pint strawberries, washed and hulled, with 6 reserved 2 cups heavy cream 1/2 cup Baileys Irish Cream confectioners' sugar, for dusting Undoubtedly, one of the prettiest fruit fools is made with strawberries, and this version adds Baileys Irish Cream for a little zip! The alternating layers of deep colored puréed fruit and the lighter whipped strawberry/cream are a picture-perfect ending to a summer meal. Chill 6 stem glasses while preparing the fruit. In a food processor or blender, purée the strawberries until smooth. In a small bowl, with an electric mixer on high speed, whip the cream until stiff. Add half the strawberry purée and the Baileys to the cream and blend until smooth. Remove glasses from refrigerator and divide the strawberry/cream mix into the bottom quarter of each. Spoon over the fruit purée, and continue to alternate layers of cream with fruit. Slice the reserved strawberries over the top of each glass and sprinkle with confectioners' sugar.
