My understanding was that it did burn down. The parish resituated to the hill on Albert Street. This explains why the old cemetery is near the golf course. Your Irish relatives are probably there. My father used to walk down to the cemetery from center town and sit and say prayers for all that were buried there as it seemed at the time that the parish had forgotton about the cemetery. He "suggested" that the cemetery was worthy of care. I last visited it with him about twenty years ago. There seemed to be more stones then and in their original places. The McLaughlins are buried there. The circular stained glass window above the altar at St. Ambrose Church on Albert St. was donated by the McLaughlin family.
