I think you might do best to check with the Manitoba Genealogical Society. They have an ongoing project indexing Manitoba graves. If your uncle's grave has been indexed, they should be able to tell you where it is and possibly what is on the stone. I checked the Winnipeg municipal cemeteries indexes and he doesn't appear in those (although the Brookside one may not be complete yet).
