I have been going through the 1901 census on automatedgenealogy.com They don't seem to be indexed yet so I have been going through Dufferin page by page (about half done so far). Next time I am at the library I will check the 1891 census. Glad (I think!) to hear that deaths weren't always registered. Shall keep plugging away.... There is a William Harrison on page 3 of part B2 of the Lisgar Census. He had a family of 4, and was born 1 January 1844 in Ontario. Irish origin and Church of England. He was a farmer with land on section 19, township 6, range 5. This is west of Carman. I don't know if these are your Harrisons but they might be. There is a William Harrison born 1 January 1844 in Ontario. I think that William and Mary are the same people who were enumerated in Dufferin as family No.4 in the 1881 census. She was born Mary McCullough.
