We place aluminium foil loosely over the turkey while cooking, and then half hour/three-quarters of an hour before taking the bird from the oven, we take it off. Then the top is browned nicely. We do the same with our turkey.  It always produces good results.  Make sure to let the turkey rest before carving it.
