I think a better explanation for the missing "W" would be because many people so long ago couldn't spell. Many people would sign their own name with an "X". As these people would go to a lawyer to have a will drawn up, it was often left up to the lawyer as to the spelling of the name. Some would maybe use the W, while others might not, This is just one theory however.
