William's wife is listed as Betsy on the 1850 Jackson County census. She is also called Betsy on a life insurance application of her grandson, Marshall Franklin Spurlock. I don't have anything giving her maiden name, but if this is the same Joseph who was a brother to Mary "Polly" Ann Birdwell Spurlock, then her mother's name was Betsy and his father's name was William Birdwell.
