Hi Gary The parish register for Cardington shows no baptism for a John Simpson anywhere the date you quote. There was a a census taken in Cardington in 1 Jan 1782, but there was no Sarah Simpson, just the widowed mother of the Sarah mentioned by Eileen, and Sarah's four living siblings. I have non conformists born in Cardington in my tree of whose birth/baptism there is no trace in the parish register, but who do appear in the 1782 census. Where did you get the birth date from, and how sure are that it occurred in Cardington?
