    2. I might have missed it but is there a written recipe for the strudel made in the video class. I remember making it with my mother as a child. The last time I helped make apple strudel was in the afternoon after my grandmothers funeral when I was 12. A couple of years ago one of my cousins sent me a copy of the picture made that day of myself with my aunts pulling the dough on the kitchen table. I must confess I enjoyed making it more than eating it. Also, in the video someone asked her what type of flour she was using and I couldn't make out the answer. I did hear her say it has more gluten in it. Would that be pastry flour? You're right. I feel like today will be the day that I attempt to copy exactly what Leah was doing.     3. The recipes for Leah's strudel dough and the fillings are on the banatbooks.com web site. Go to the Treffen page where you viewed the video. In the list of links under Friday's date, you will see "Strudel Recipes". Leah uses Bread flour, since it has more gluten than all-purpose flour. It is the gluten that forms that allows the dough to stretch.
