Although I was not at the strudel making class (went to the Oktoberfest), I was one of the lucky ones who had the pleasure of sampling Leah's strudels - pulled strudel with a variety of fillings, as well as the poppy seed strudel, all delicious. Thank you so much, Leah. I found this interesting website with several videos on making pulled strudel (German: "Gezogene Strudel" or "Ziehstrudel"). Scroll down just a bit, the ladies speak Hungarian, but there are German and English captions. There is also a video of a master baker - is he ever fast! http://klostersuppe-mit-haube.blogspot.com/2009_05_01_archive.html The first 3-part video shows an 88-year old Hungarian lady, she reminds me so much of my mother as she kneaded and pulled out the dough - take note of her kneading method. I would have to help her with the pulling, she on one side of the table and I on the other. There are more strudel videos, each with a slightly different method. You will also note that there are two ways of adding the filling: either spreading it all over the dough or placing it in a strip along one long edge.
