Deborah, All the official documentations older than 100 years are to be found in the archives of the individual province, state, etc. When dealing with Europe, please remember that during the WWI and WWII many archives have been bombed, burned or such and much of the history of the land and people was destroyed for ever. The main archives of Hungary are in Budapest. Each province has also its own archives. Hello! As we know the 30-year war in Europe ended in 1648. Large areas in what is today Germany was totally depopulated. But not so in Switzerland, which became independent from the Holly Roman Empire that same year. Switzerland had actually a population explosion about that time, and after the war ended thousands of Swiss people rushed into southern Germanic areas and settled there. Some of those descendants eventually emigrated to the New World of Canada and USA. NORBERT EMMERICH just published a book covering the Swiss settlers to Heidelberg in Baden: "SCHWEIZER (Einwanderer) IN HEIDELBERG" nach dem dreißigjährigen Krieg". 600 pages with a list of 1600 Swiss families, who settled in Heidelberg. My mother would make them as we ate and we would fill them with jelly. She had a difficult time keeping up with us. My grown children still ask for them although we have outgrown the potato soup. To: John McClellan I remember them being called "Pollachinka". I had a fondness for the ones filled with cottage cheese. I've pasted in a recipe (not mine) for them below: GROSSE PANAKUCHEN (Large Thin Pancakes) (From Lefor Cookbook) Ingredients 5 eggs, beaten 2 cups flour 2 tsp sugar 1 tsp salt 3 Tbsp cooking oil 2-1/2 cups milk Directions Beat eggs; add salt, sugar and flour alternatively with milk until smooth and thin. Pour 1/4 cup batter into a greased hot pan so it covers all of the bottom of the pan. Swirl pan to make sure batter is spread thin. Fry very quickly on both sides until a light, golden brown. Fill with jelly or fruit. Roll up and serve hot. Should make about 20 pancakes. Goes well with bean or potato soup.

My family made a crepe style pancake that we called Dina-pahn-a-kuka. It was our take on Dünnepfannkucken (not sure this is a correct spelling though). We sprinkled ours with sugar and cinnamon. We loved them fresh and warm right out of the frying pan. 3 eggs 1 Cup flour ( approx.) 1 cup milk sugar - heaping Tablespoon + dash It's a thin batter. Heat the pan with oil. Put in enough batter to make about a 10 inch pancake. Roll it around to cover the bottom of the pan. When it has browned a little, turn it over, and finish the other side. It doesn't take long. Serve as soon as possible. John, What was it your grandmother called them? It wasn't by any chance something similar to the French word "crepes," was it? We called them "pallichinka" (definitely not the right spelling, but that's how I remember it sounding) but that was more than likely just our mangling of the proper name, since we were pretty much English-only speakers. John, et al: My mother made these as a dessert with grape jelly filling. We used to roll our own and put the grape jelly and a sugar/cinnamon mixture on them. The recipe has been handed down and now my wife makes them in a large frying pan about 10" in diameter. Really good.
