The German archives will not have the ship's name that your ancestor left on. The only place you will find that is the arrival port. Have you rented the microfilms for the ships that arrived for the known date? The LDS has several groups of microfilms of Baltimore arrivals that can be rented at your local Family History Center, depending on the date. Look in the online LDS Family History Library catalog at FamilySearch.
