Hello David, There are some Taaffe entries in my files, taken from the C of E birth and marriage entries. Probably you have them, but here goes: John Taaffe married Elizabeth Freeman (she signed with a cross) on 12.6.1849, witnesses were Mary Anne D(P or B ?)oole of Gosford and William Beavan of Wyong. Children born in the Gosford district to John and Elizabeth Taaffe: James b. 16.8.1850 at Cabbage Tree, father a labourer (James died 1924, Jan or Feb, at West Wallsend where he had lived for about 25 years. Buried there.) Mary Ann b. 2.3.1853 at Blue Gum Flat [Ourimbah], father a sawyer John b. 27.6.1855 at Erina, father a butcher Elizabeth b. 12.4.1857 at Erina, father a butcher Have you checked out Edward Stinson's books on the history of Wyong in six volumes for William Beavan, who was I think a bullock driver in the timber industry? He was born on 1 March, 1810, died after long suffering on 29 April 1887. His widow Isabella died 14 August 1904 aged 82 (details from their large headstone in a Wyong area cemetery .. I took the photo for one of Stinson's books). Also, have you checked "Historical Records of the Central Coast of New South Wales" - Bench Books and Court Cases: 1826-74 published by Gosford Local History Study Group?
