Raw Hamburger used to be served in restaurants as "Steak Diane." No, I never ordered any. I guess raw Hamburger used to be safe, like raw eggs. I now buy only pasteurized eggs. I think "Steak Tartar" was the same thing. I honestly can't see the drawing power of these delicacies. No, no, steak Diane is a delicious dish that involves sauteeing and flaming. It's cooked and a really fancy, good dish. Steak or beef tartare is the raw stuff...I wouldn't dare to eat any raw ground beef these days...too many possibilities for e.coli or other bugs to getcha.
