My favorite rhubarb pie recipe is a single crust with a crunch topping a lot like that on Dutch apple. A couple of our bakery/restaurants have rhubarb pies during "season" but I haven't figured out where they go to find "seasons." We have berries from Chile in the winter at the markets, but can't remember seeing fresh rhubarb. It is usually available in the freezer. I have 3 - 4 tomato plants which grow out of my compost every year and provide enough tomatoes until Thanksgiving or Christmas - whenever our first chilly weather arrives - to annoy everyone I know. Anyone who makes the mistake of coming by during the season is forced to take a bag home with them. I also have 4 dwarf citrus trees - lemon, orange, grapefruit and tangerine which overwhelm us with citrus, but no rhubarb - which I love. Too bad I can't ship someone citrus in exchange for some fresh rhubarb. A few years back when I had kids at BYU I did ship a few boxes of citrus to them. Pretty costly. Dear Carmelita Marilynn, You can buy frozen rhubarb, all cleaned and nicely cut to pop right into a pie shell. It's almost as good as going out, pulling it, cutting off the leaves, washing it, cutting it up yourself! :^) I don't like to eat piecrust (even though I love the homemade kind) so I put it in unbaked pie shell with about a cup of sugar, 3 T. flour and a couple of eggs...all mixed up with a tiny bit of milk...poured on, then baked. Start at about 400 for 10 mintues then lower oven to 350 for about 45 minutes. This is a lot easier than making a two crust pie. If you are in a hurry, buy the already fixed pie shell in the store. I fake it by re-shaping the edge so it looks homemade. (We Armstrongs are very sneaky and crafty when we wannabe.) Juanita I live in Salem, Oregon which is about an hour away from Eugene. What would you like to know about Oregon? We joke that the rainy season is January 1st to December 31st. When I first moved to NC, I couldn't believe that Rhubarb would not grow here, Likewise everbearing Strawberries. So being Scottish-Irish with a stubborn streak, I tried both. Had a beautiful Rhubarb plant that disappeared overnight. We don't grow lemons or oranges, either. NC DOES grow good Strawberries but they don't last long. One has to OD on them before the season is over. Grandma called it Pie Plant and I called it Rhubarb and we used to fight good-naturedly about that. Once in awhile I can find it in the stores but not often. I grew wonderful Raspberries but got sick of fighting the darn Blue Jays over them. They thought the berries belonged to THEM! And I don't like tomatoes but I like tomato sauce. No, no Lilacs either and could smack my son if I could reach him for calling me to brag about how wonderful his Lilacs smell. Ah, well. Juanita, didn't you used to be on this list? I seem to remember your name. I don't live in OR but my cousin just moved back to MA from there after seven years. She liked it quite well...the winters were milder than in New England, spring was earlier. I guess they do have a lot of rainy days but she thought it was quite a nice place to live, pretty and clean. Thanks for the compliment, F.R. I recently read that rhubarb has to have a period of cold or freezing temps in the winter, probably why you had trouble trying to grow it in the south. Sigh. My friend in GA tries so hard to grow lilacs, her favorite flower...and they, like rhubarb, need a period of very cold weather. On the other hand, we can't grow oranges, lemons and maters in the winter like you southern folks can. I can't imagine being sick of BBQ, but then we don't have it very often and none like yours (although son Jeff does a pretty good job of trying.) I still have some of your rub and I suppose the spices are getting stale by now. Jeff made up a new batch and will give me some. And I still make your beer turkey every year...looks messy, falling apart, but SO good.
