You may very well be correct in your supposition that 18th century German parishes in PA wrote church records in German. It looks as though you have done quite a bit of research on this name and family. I have experienced the same with German language records in the Greater Cincinnati area in Ohio. The city is on the banks of the Ohio River and Kentucky cities are located on the banks of the Ohio River across from Cincinnati. All this area has historic government and church records in which many are in German language. As I have researched German family immigrants, I too have seen the language and spelling of families in German church records change as the 19th century was coming to an end. If German immigrants did this in the 19th century, I can't help but feel it was done in 18th century, no matter what state was settled by them.
