This is off message but some time ago one of the listers was looking for information on Alsace food. There is a famous restaurant in San Francisco (Fleur de Lys) the chef Hubert Keller...who is from Alsace. I believe his restaurant is one of the top 40 French restaurants in the US He published a cookbook "The Cuisine of Hubert Keller" in 1996 which has some food from Alsace.
