Yes, I think it does pretty much mean donkey miller (Esel Mueller). Donkeys and other animals were sometimes used to turn mills. There are a few references to Eselmueller on the web and perhaps you could contact the more prominent one at www.eselmueller.ch the email address [email protected] He apparently does donkey rides and stuff like that, but I'd guess that he has a good understanding of the tradition of Eselmuellers.
