A visit to Rootsweb, Ancestry or the LDS site... or any similar site, will convince anyone that you can only use what you find as a guide. There are people that don't bother verifying what they find... and then others see what they have and take it as gospel... further confusing matters. I've found some of my family lines that were poorly recorded... and when I log onto Ancestry I find 15 to 20 people who have submitted the same mistakes. Newbies go there and see all these postings and think... "Well if all those people found the same thing then it must be right". They don't bother verifying it. I've had people ask my assistance and then chastize me for giving them misinformation because "I found on an FTM disk........ ". They don't believe that FTM is inaccurate... the Church registries are wrong. I'm not saying that all my database has been verified --- more than half has... what hasn't is not considered accurate by me... It is simply a guide... And will eventually be proven. Some people believe most of what they read... Which is REALLY dumb. A few years ago, a technical college in Massachewsetts had it's Information Technology students survey ONLY American schools and US Government sites to see how accurate was the information. The results... More than 60% of the data available at post-secondary institutions was inaccurate and filled with misinformation (more than 25% of this was outright lies). Government sites didn't fare much better... They were just under 55% inaccurate or outdated. Even this.... Don't believe EVERYTHING I say... <grin> Favourite French-Canadian Recipes: ======================== Crème brûlée québécoise 4 1/2 T. cornstarch 1/2 tsp. almond extract 3 cups milk 1/2 cup whipping cream, whipped 3/4 cup molasses Blend cornstarch and milk in top of double boiler. Cook, stirring constantly, until smooth and thickened. Cover and cook 5 min., stirring occasionally. Boil molasses until it has a faint odor of burnt sugar and is slightly caramelized (310° F). Cool slightly. Add molasses gradually to milk mixture, heating through until smooth and creamy. Strain through cheesecloth, add almond extract and pour into molds or serving dishes. Chill until firm. Serve with whipped cream. 6 servings. *** Maple Syrup Pie or Tarts 1 cup milk Meringue 1/4 cup flour 1/8 tsp salt 2 egg whites 1 cup maple syrup Dash salt 2 egg yolks, beaten 1/4 cup sugar or 1 cup whipped cream 1 baked 8-inch pie shell or 12 baked medium tart shells Heat milk. Mix together flour, salt and maple syrup until smooth; stir gradually into heated milk and cook until thickened (about 5 min.), stirring constantly. Mix a little of the hot mixture with egg yolks, stir egg yolks into remaining hot mixture and continue cooking 3 to 4 min. Remove from heat. Stir in butter. Cool slightly and pour into pie shell or tart shells. Top with meringue or whipped cream. For meringue: Beat egg whites and salt until soft peaks form; add sugar gradually and continue beating until stiff and glossy. Spread over filling. Bake until lightly browned (about 15 min. at 350° F, or 5 min. at 425° F)
