Hi Jayne, I did some searching recently at the French Canadian Genealogical Society of Connecticut, which inherited the collection of Father Hector Hebert. Unfortunately, I didn't come up with any of the information you are looking for. I did find one document that confirms the birth date you have for Jean-Baptiste Hebert plus his baptism on 28 July 1737 at Grand-Pre. Godparents - Claude Landry and Marguerite Leblanc. The same document had an entry for Charles with the same parents. His birth and baptism are given as 4 October 1747 at Grand-Pre. Godparents - Joseph Hebert and Anne Marie Landry. The source document is an alphabetical listing of Acadian Heberts, the information for which was extracted from Federal Archives in Ottawa.
