    3. A (semi-) new tradition in south Louisiana (& east Texas) is the outdoor frying of small turkeys. You take a 8 to 12 pound thawed turkey, inject it with seasoning and deep fry in peanut oil. Before I moved up here caused by Hurricane Katrina. At noon, Nubby would shut down the Auto Repair shop and start the butane burners. All the guys would come by with their turkeys and a case of beer. Sometime during the afternoon your turkey would take it's turn in the fryers. This was one of the few times of the year the blue and white collars would get together. The "blues" provided the place & equipment. One of the White collars was the local Planters rep. & he provided the peanut oil. I was designated driver so would provide "taxi" service bringing the gang home. About 4 PM the wives would show up and pick up the last of the straggles. Since moving up I have to become "an American" and have to order a fried turkey from the store. Boohiss Paul
